Ingredients
For the Chicken:
- 3โ4 pounds chicken pieces (legs, thighs, wings, or breasts)
- 2 cups buttermilk
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- ยฝ teaspoon onion powder
- ยฝ teaspoon cayenne pepper (optional)
For the Coating:
- 2 cups all-purpose flour
- 1 tablespoon cornstarch
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- ยฝ teaspoon onion powder
For Frying:
- Vegetable oil or peanut oil, enough for about 2 inches in a deep skillet
Instructions
1. Marinate the Chicken
Place chicken pieces in a large bowl or zip-top bag. Add buttermilk, salt, pepper, paprika, garlic powder, onion powder, and cayenne pepper. Cover and refrigerate for at least 4 hours, or overnight for the best flavor.
2. Prepare the Coating
In a large bowl, combine flour, cornstarch, salt, pepper, paprika, garlic powder, and onion powder.
3. Coat the Chicken
Remove chicken from the buttermilk mixture, allowing excess to drip off. Dredge each piece thoroughly in the seasoned flour, pressing gently so the coating sticks.
4. Fry the Chicken
Heat oil to 350ยฐF in a deep skillet or Dutch oven. Carefully add chicken pieces, being careful not to overcrowd the pan.
Fry until golden brown and cooked through:
- Wings: about 8โ10 minutes
- Thighs and drumsticks: about 12โ15 minutes
- Breasts: about 15โ18 minutes
The internal temperature should reach 165ยฐF.
5. Rest Before Serving
Place fried chicken on a wire rack or paper towels to drain. Let rest for a few minutes before serving.
