Ingredients

  • 1 pound fresh okra, washed and sliced into ½-inch pieces
  • 1 cup buttermilk
  • 1 large egg
  • 1 cup yellow cornmeal
  • ½ cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne pepper (optional)
  • Vegetable oil, for frying

Instructions

1. Prepare the Okra

Wash okra and slice into bite-sized pieces. Place in a bowl with buttermilk and egg. Stir gently and let sit for 15–20 minutes. This helps season the okra and allows the coating to stick.

2. Prepare the Coating

In a separate bowl, combine cornmeal, flour, salt, pepper, garlic powder, onion powder, paprika, and cayenne pepper.

3. Coat the Okra

Drain the okra mixture slightly, then toss the pieces in the seasoned cornmeal mixture until evenly coated.

4. Fry Until Golden

Heat about 2 inches of oil in a skillet or Dutch oven to 350°F.

Fry okra in small batches for 3–5 minutes, stirring occasionally, until golden brown and crispy.

Remove with a slotted spoon and place on a paper towel-lined plate or wire rack to drain.

5. Serve Warm

Sprinkle with a little extra salt if desired and serve while crispy.
