Golden, crispy, and seasoned to perfection — these Southern fried pork chops are a family favorite that's just as welcome on a weeknight as they are on a Sunday supper table. Serve them with creamy mashed potatoes, fried okra, and a tall glass of sweet tea for a meal everyone will remember.
Ingredients
- 4 bone-in pork chops (about ¾-inch thick)
- 1 cup buttermilk
- 1 large egg
- 1½ cups all-purpose flour
- ½ cup yellow cornmeal
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- ½ teaspoon dried thyme (optional)
- ¼ teaspoon cayenne pepper (optional)
- Vegetable oil, for frying
Instructions
1. Marinate the Pork Chops
In a shallow dish, whisk together the buttermilk and egg.
Place the pork chops in the mixture, turning to coat both sides. Cover and refrigerate for at least 30 minutes, or up to 4 hours for even more tender pork chops.
2. Prepare the Coating
In another shallow dish, combine the flour, cornmeal, salt, pepper, garlic powder, onion powder, paprika, thyme, and cayenne pepper.
3. Coat the Pork Chops
Remove each pork chop from the buttermilk mixture, allowing any excess to drip off.
Press both sides firmly into the seasoned flour mixture until well coated.
For an extra crispy crust, let the coated pork chops rest for 10 minutes before frying.
4. Fry Until Golden
Heat about ½ inch of vegetable oil in a large cast-iron skillet over medium heat until it reaches 350°F.
Carefully place the pork chops in the hot oil without overcrowding the pan.
Cook for about 5–7 minutes per side, depending on thickness, until the coating is golden brown and the pork reaches an internal temperature of 145°F.
Transfer to a wire rack or paper towel-lined plate to drain.
5. Serve
Serve hot with your favorite Southern side dishes.
